Rinse Quinoa

Place 1 cup of quinoa in a fine mesh strainer and rinse under cold water to remove bitterness.

Chop Vegetables

Dice the bell peppers, zucchini, and halve the cherry tomatoes. Set aside.

Prepare Spinach

Wash and dry 2 cups of fresh spinach leaves.

Cooking

Cook Quinoa

In a medium saucepan, combine rinsed quinoa with 2 cups of vegetable broth and 1 teaspoon of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until all liquid is absorbed.

Sauté Vegetables

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

Add Other Vegetables

Add the diced bell peppers and zucchini to the skillet. Cook for 5-7 minutes until softened, then add halved cherry tomatoes and fresh spinach. Cook until spinach wilts.

Season the Mixture

Stir in 1 teaspoon of black pepper, 1 teaspoon of cumin, and 1 teaspoon of paprika. Mix well and cook for an additional 2 minutes.

Finishing Touches

Combine Ingredients

Once the quinoa is cooked, fluff it with a fork and add it to the skillet with the sautéed vegetables. Stir well to combine.

Add Lemon Juice

Drizzle 2 tablespoons of lemon juice over the mixture and stir to incorporate.

Serve and Garnish

Serve the quinoa and vegetable mixture warm, garnished with chopped fresh parsley and crumbled feta cheese.
