Sauté the Mushrooms

In a skillet, heat the olive oil over medium heat. Once hot, add the maitake mushrooms and sauté for about 5-7 minutes until they soften and begin to brown.

Add Garlic and Season

Add the minced garlic to the mushrooms and cook for an additional 1-2 minutes until fragrant. Season with salt and black pepper, then remove from heat.

Caramelized Onions

Cook the Onions

In another skillet, melt the butter over low heat. Add the sliced onion and cook slowly, stirring occasionally, for about 15-20 minutes until they are golden brown and caramelized.

Add Brown Sugar

Sprinkle the brown sugar over the onions and stir well, cooking for an additional 2-3 minutes. Remove from heat and set aside.

Cheese Mixture

Combine the Cheeses

In a bowl, mix together the grated cheddar cheese and softened cream cheese until well combined. Set aside.

Assembly

Prepare the Bread

Take two slices of sourdough bread and spread a generous amount of the cheese mixture on each slice.

Layer the Fillings

On top of one slice of bread, layer the sautéed mushrooms followed by the caramelized onions. Top with the other slice of bread, cheese side down.

Toast the Sandwich

In the same skillet used for the mushrooms, toast the sandwich over medium heat for about 3-4 minutes on each side until the bread is golden brown and the cheese is melted.

Serving

Garnish and Serve

Once toasted, remove the sandwich from the skillet, slice in half, and garnish with fresh herbs if desired. Serve warm.
