Prepare the Gai Lan
Bring a pot of water to a boil and blanch the gai lan for 2-3 minutes until tender. Drain and set aside.
Cook the Lingcod
In a large skillet, heat the vegetable oil over medium heat. Season the lingcod fillets with salt and sear them for about 3-4 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
Make the Laksa Curry
In the same skillet, add the laksa curry paste and cook for 1-2 minutes until fragrant. Pour in the coconut milk and stir well, bringing it to a gentle simmer.
Combine and Serve
Add the blanched gai lan and bean sprouts to the curry and cook for an additional 2 minutes. Place the seared lingcod in the curry to warm through. Serve the curry in bowls, garnished with roasted peanuts and fresh cilantro.
