Preparation

Prepare the Pork

Cut the pork shoulder into 1-inch cubes and season with salt and black pepper.

Chop Vegetables

Chop the onion, mince the garlic, and dice the tomatoes.

Prepare Green Chiles

If using fresh green chiles, roast and peel them before dicing.

Cooking

Sauté the Onion and Garlic

In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.

Brown the Pork

Add the cubed pork to the pot. Cook until browned on all sides, about 5-7 minutes.

Add Remaining Ingredients

Stir in the diced tomatoes, green chiles, cumin, oregano, and chicken broth. Bring the mixture to a boil.

Simmer

Reduce the heat to low and cover. Let the stew simmer for 1.5 to 2 hours, or until the pork is tender.

Serving

Serve the Dish

Ladle the pork green chile into bowls and serve with tortilla chips, chopped cilantro, and lime wedges on the side.
