Sauté the Base Ingredients

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

Add Vegetables

Add the diced carrots, celery, and potatoes to the pot. Sauté for another 5-7 minutes, stirring occasionally until they begin to soften.

Pour in Broth

Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce heat to low and let it simmer for 10 minutes.

Incorporate Seasonal Veggies

Stir in the diced zucchini, chopped spinach, diced tomatoes, and bell pepper into the pot. Allow the soup to simmer for an additional 10-15 minutes until all vegetables are tender.

Season the Soup

Add the dried thyme, dried basil, salt, and black pepper. Stir well to combine. Taste and adjust seasoning as necessary.

Finish with Lemon Juice

Remove from heat and stir in the lemon juice for added brightness.
