Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips about 1/4 inch thick. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.
Fry the Potatoes
Heat vegetable oil in a deep fryer or large pot to 325°F (160°C). Drain and pat dry the soaked fries. Carefully lower them into the hot oil in batches and fry for about 5-6 minutes until they are pale and soft. Remove and drain on paper towels.
Crisp the Fries
Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches until golden brown and crispy, about 3-4 minutes. Drain on paper towels and season with salt to taste.
Chimichurri Sauce
Make the Chimichurri
In a food processor, combine fresh parsley, fresh cilantro, garlic cloves, red wine vinegar, olive oil, red pepper flakes, and salt. Blend until the mixture is finely chopped but still has some texture. Adjust seasoning to taste.
