Toasted Coconut Syrup

Toast coconut

Preheat a small skillet over medium heat. Add the shredded coconut and toast, stirring frequently, until golden brown and fragrant, 4–6 minutes. Immediately transfer to a plate to cool so it doesn't continue to brown.

Make syrup

In a small saucepan combine the granulated sugar and water. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves. Add the toasted coconut, reduce heat to low and simmer for 5 minutes, stirring occasionally to infuse coconut flavor.

Strain & cool

Remove from heat and let sit 10 minutes to steep. Strain the syrup through a fine-mesh sieve or cheesecloth into a clean jar, pressing on solids to extract as much liquid as possible. Discard solids. Cool to room temperature, then refrigerate. Syrup will keep up to 2 weeks refrigerated.

Chill glass

Place an old-fashioned glass in the freezer or fill with ice water to chill while you build the drink.

Build the cocktail

Add the Grey Goose vodka (1.5 oz), Bumbu rum (0.5 oz), Averna amaro (0.5 oz), cold brew coffee (0.75 oz), toasted coconut syrup (0.5 oz), 2 dashes Angostura bitters and 1 dash orange bitters (if using) into a mixing glass or shaker filled with ice.

Stir

Stir the mixture briskly for 20–30 seconds (about 20–30 rotations) until well chilled and slightly diluted. This preserves clarity and a silky texture appropriate for an Old Fashioned–style drink.

Prepare glass

Discard ice water from the chilled glass (if used). Place a large ice cube or several large cubes in the glass.

Strain & garnish

Strain the chilled cocktail over the large ice cube in the glass. Express the orange peel over the drink to release oils (pinch and twist over surface), then rub the peel around the rim and drop it into the glass. Sprinkle a pinch (about 1 tsp) of toasted coconut flakes on top of the drink for aroma and texture if desired.

Serve

Serve immediately with a short stirring spoon. The cocktail yields a balanced profile of vodka clarity, rum warmth, bitter-sweet Averna, coffee depth and toasted coconut sweetness—an elevated Old Fashioned for sipping.
