Cake batter
Whisk together the dry ingredients: sift or whisk 2.25 cups all-purpose flour, 2 tsp baking powder and 0.75 tsp fine sea salt in a medium bowl; set aside.
Cream butter and sugar: In the bowl of a stand mixer fitted with the paddle (or using a handheld mixer), beat 0.5 cup room-temperature unsalted butter with 1.25 cups granulated sugar and 1 tablespoon vanilla bean seeds (or extract) on medium-high speed for 3–4 minutes, until pale and fluffy.
Add eggs one at a time, scraping down the bowl after each: add 3 large eggs and beat until incorporated. Mixture may look slightly curdled—this is normal.
Alternate wet and dry: With the mixer on low, add one-third of the dry ingredients, then half of 0.75 cup whole milk, then another third of the dry, then the remaining milk, finishing with the last third of dry. Mix only until just combined. Fold in 1/2 cup sour cream by hand to ensure a tender crumb.
Divide batter evenly between prepared pans, smooth tops, tap pans on counter to release air pockets. Bake for 22–28 minutes, rotating pans halfway, until a toothpick inserted into centers comes out with a few moist crumbs and tops are light golden.
Cool cakes 10 minutes in pans on a rack, then run a knife around edges, invert onto rack, remove parchment, and cool completely before assembling (about 1 hour).
Roasted apple jam
Preheat the oven to 400°F (200°C). Toss 3 cups diced apples with 1/2 cup granulated sugar, 1 tablespoon lemon juice, 1 tablespoon unsalted butter, and 1/2 teaspoon ground cinnamon in an ovenproof baking dish.
Roast the apples for 25–30 minutes, stirring once or twice, until very tender and beginning to brown at the edges. The roasting concentrates the sugars for a deeper flavor.
Transfer roasted apples to a medium saucepan and simmer over medium-low heat until mixture reduces and thickens, about 10–15 minutes. Stir in 1/2 teaspoon vanilla extract at the end. For a smoother jam, mash with a potato masher or pulse 2–3 times in a food processor or with an immersion blender—leave slightly chunky for texture.
Taste and adjust sweetness or lemon as needed. Cool to room temperature before using. Reserve 1/2 cup for garnish and about 1 cup for layering between cake layers.
Burnt cinnamon sweet cream
In a heavy saucepan, combine 2 cups heavy cream, toasted cinnamon sticks, 1/4 cup granulated sugar and 1 teaspoon vanilla. Bring to a gentle simmer over medium heat, then lower heat and let simmer gently for 12–15 minutes to infuse and reduce slightly. Stir occasionally to prevent skin from forming.
For a subtle caramelized note, increase heat to medium-high for the last 2 minutes, stirring constantly, until the surface shows small caramel streaks and the aroma deepens. Remove from heat; discard cinnamon sticks. Optionally whisk in 1 tablespoon cold butter to give the cream a silky sheen as it cools.
Cool to room temperature, then chill in the refrigerator until firm enough to use in frosting (at least 1 hour). Yield: about 1.5–1.75 cups; use 3/4 cup in frosting and reserve remainder for drizzling.
Frosting / assembly
Prepare frosting base: In a clean bowl, beat 1 cup room-temperature unsalted butter with 1/2 cup room-temperature cream cheese until smooth and pale, about 3 minutes.
Add powdered sugar and cream: Gradually add 3 cups powdered sugar, about 1 cup at a time, beating on low until incorporated. Add 3/4 cup chilled burnt cinnamon sweet cream and 1 teaspoon vanilla from the burnt cream ingredient, then increase speed to medium and beat until light and fluffy, about 2–3 minutes. If frosting is too thin, add up to 1/2 cup more powdered sugar; if too firm, add 1–2 tablespoons cream.
Finish flavor: Stir in 1/2 tsp smoked flaky salt and 1 teaspoon finely chopped fresh thyme leaves into the frosting and taste; adjust salt/thyme to preference.
Level the cooled cake layers if needed. Place one layer on your cake stand or plate and spread about 1/2 cup roasted apple jam evenly over the top, leaving a 1/4-inch border. Pipe or spread a thin crumb coat of frosting (about 1/4 of total) over the jam and chill 15 minutes to set.
Apply final coat: Place second cake layer on top, press gently, then buttercream-frost the top and sides with the remaining frosting, smoothing with an offset spatula for a clean finish.
Spoon reserved burnt cinnamon sweet cream into a small squeeze bottle or spoon and drizzle lightly over the top for flavor pockets and shine (optional).
Garnish
Spoon the reserved 1/2 cup roasted apple jam into a small bowl and warm slightly if thick to make it spoonable. Dot or spoon small quenelles of jam around the cake top.
Sprinkle a light pinch (about 1/4 tsp) of smoked flaky salt across the top to heighten flavor contrast. Scatter extra thyme sprigs and a few finely chopped thyme leaves as decoration and aroma.
Chill the finished cake for at least 30 minutes to let flavors marry. Bring to room temperature 20–30 minutes before serving to allow the burnt cinnamon cream notes to bloom.
