Prepare the Rice

Cook the Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice, water, saffron threads, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes. Remove from heat and let it sit covered for 10 minutes.

Shape the Rice Bites

Once the rice is cool enough to handle, wet your hands and form small bite-sized discs (about 1.5 inches wide) with the rice.

Heat the Oil

In a deep skillet or frying pan, heat the oil over medium-high heat until hot.

Fry the Rice Bites

Carefully place the rice discs into the hot oil and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Prepare Harissa Mayo

Mix the Sauce

In a small bowl, combine the mayonnaise and harissa paste. Mix well and set aside.

Assemble the Dish

Top the Rice Bites

Place each crispy rice bite on a serving platter. Top with diced ahi tuna, a slice of avocado, jalapeño, a dollop of harissa mayo, and finish with a sprinkle of smoked trout roe.
