Method

Dough Preparation

Activate Yeast

In a small bowl, combine warm milk (110°F/43°C) and active dry yeast. Add 1 tablespoon of sugar and stir gently. Let it sit for about 5-10 minutes until it becomes frothy.

Mix Dry Ingredients

In a large mixing bowl, whisk together the flour, remaining sugar, and salt.

Combine Ingredients

Make a well in the dry ingredients, and add the frothy yeast mixture, eggs, melted butter, and vanilla extract. Mix until a dough forms.

Knead the Dough

Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let the Dough Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

Frying Beignets

Prepare Oil

In a deep pot or fryer, heat vegetable oil to 350°F (175°C).

Shape the Beignets

Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out to about 1/4 inch thick and cut into squares.

Fry the Beignets

Carefully drop the squares into the hot oil, a few at a time, and fry for about 2-3 minutes on each side until golden brown.

Drain and Dust

Remove the beignets from the oil and drain on paper towels. While they are still warm, dust generously with powdered sugar.

Make the Dipping Sauce

In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and add the chocolate chips. Stir until smooth and fully melted.
