Cook the Pasta
Bring a large pot of salted water to a boil. Add the pasta shells and cook according to package instructions until al dente. Drain and set aside.
Make the Cheese Sauce
In a saucepan over medium heat, melt the butter. Stir in the flour and cook for about 1-2 minutes until golden. Gradually whisk in the milk, continuing to stir until the mixture thickens. Lower the heat and add the shredded Gouda cheese, salt, and black pepper, stirring until the cheese is melted and smooth.
Combine Pasta and Sauce
Add the cooked pasta shells and shredded chicken to the cheese sauce. Mix well to ensure everything is evenly coated.
Optional Topping
If desired, transfer the mac and cheese to a baking dish, sprinkle breadcrumbs on top, and broil for 2-3 minutes until golden brown.
