Prepare the Peppers

Wash the green bell peppers and scotch bonnet peppers thoroughly. Remove the stems and seeds from the green bell peppers and cut them into smaller pieces. For the scotch bonnet peppers, you may choose to leave the seeds in for added heat or remove them for a milder flavor.

Chop the Aromatics

Peel the garlic cloves and ginger. Finely chop the garlic, ginger, and onion. Set aside.

Sauté the Vegetables

In a large skillet or saucepan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes. Then, add the chopped garlic and ginger, stirring for another 2 minutes until fragrant.

Add the Peppers

Add the chopped green bell peppers and scotch bonnet peppers to the skillet. Stir well and cook for about 10-15 minutes until the peppers are soft and their color has brightened.

Blend the Mixture

Remove the skillet from heat and allow the mixture to cool slightly. Transfer the mixture to a blender or food processor and blend until you achieve a smooth paste.

Season the Shito

Return the blended mixture to the skillet. Add salt and any optional ingredients like dried fish or seasoning cubes. Stir well and cook on low heat for an additional 5-10 minutes to meld the flavors together.
