Prepare the Shrimp

In a large pot, bring water to a boil. Add lemon slices and Old Bay seasoning to the water. Once boiling, add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Drain and place shrimp in ice water to cool. Once cooled, drain again and set aside.

Make the Kimchi Cocktail Sauce

In a medium bowl, combine chopped kimchi, ketchup, horseradish, lemon juice, soy sauce, and Sriracha. Mix until well combined and adjust seasoning to taste.

Serve

Arrange the cooked shrimp on a platter and serve with the kimchi cocktail sauce on the side. Enjoy your shrimp cocktail!
