Method
Preparation of Guacamole
Make the Guacamole
Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl. Mash the avocados with a fork until smooth or chunky, according to your preference.
Add lime juice, salt, diced tomatoes, chopped cilantro, and diced red onion to the mashed avocado. Mix well to combine all ingredients. Adjust salt and lime juice to taste.
Cover the guacamole with plastic wrap pressed directly onto the surface to prevent browning and set aside.

Prepare the Cheese
In a large mixing bowl, combine the shredded cheddar cheese and shredded Monterey Jack cheese. Mix them together evenly and set aside.
Assembling the Nachos
Layer the Nachos
On a large baking sheet, spread out the tortilla chips evenly. Make sure to cover the entire surface.
Sprinkle the cheese mixture generously over the tortilla chips, ensuring even coverage.
Distribute the sliced jalapeños over the cheese layer, adding as many as you like based on your spice preference.
Baking
Bake the Nachos
Preheat your oven to 350°F (175°C). Place the baking sheet with nachos in the preheated oven and bake for about 10 minutes, or until the cheese is melted and bubbly.

Serve
Remove the nachos from the oven and let them cool for a minute. Serve immediately with the prepared guacamole on the side.
