Prepare the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Breading Mixture

In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well.

Prepare the Egg Wash

In a separate bowl, whisk together the egg and milk until well combined.

Heat the Oil

In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread the Calamari

Dip each calamari ring into the egg wash, then dredge in the flour mixture, ensuring they are well coated.

Fry the Calamari

Carefully place the breaded calamari rings in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and place on paper towels to drain excess oil.

Prepare the Aioli

In a small bowl, combine the mayonnaise, minced garlic (press or finely chop), sriracha sauce, lemon juice, and salt. Mix until smooth.

Taste the aioli and adjust the seasoning by adding more sriracha or salt if desired.
