Preheat your oven to 350°F (175°C). Spread the tortilla chips on a baking sheet in a single layer. Drizzle with olive oil and sprinkle with sea salt. Bake for 10-12 minutes or until crispy and golden.
Making the Poke Topping
Prepare the Tuna
Cut the sushi-grade tuna into small cubes. In a mixing bowl, combine the tuna with soy sauce, sesame oil, and finely chopped green onions. Mix gently to coat the tuna evenly.
Making the Spicy Mayo
Combine Ingredients
In a small bowl, combine the mayonnaise, Sriracha sauce, and lime juice. Mix well until smooth and creamy. Adjust the spiciness by adding more Sriracha if desired.
Assembling the Poke Nachos
Layer the Nachos
On a large serving platter, layer the baked tortilla chips. Top evenly with the poke mixture. Add the avocado on top. Drizzle generously with the spicy mayo. Optionally, garnish with extra green onions and sesame seeds.
