Dry ingredients
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.
Whip egg whites
In a clean bowl, beat the egg whites with electric mixer on medium-high speed until they hold soft peaks.
Combine wet and dry
Pour the wet yolk mixture into the dry ingredients and whisk just until no dry streaks remain; the batter should be slightly lumpy.
Add melted butter
Stir in the melted butter until the batter is evenly moistened.
Fold in whites
Gently fold the whipped egg whites into the batter in 2-3 additions until just incorporated; do not overmix.
Prep waffle iron
Preheat a Belgian waffle iron and lightly grease the grids with oil or nonstick spray.
Cook waffles
Ladle about 1/2 cup batter (adjust for your waffle iron) onto the hot iron and cook until deep golden brown and crisp, about 3-5 minutes.
Warm syrup
Meanwhile, warm the maple syrup in a small saucepan over low heat or in the microwave until steaming.
Serve
Serve the hot waffles with the warm maple syrup poured over top. Optionally add a pat of butter.
