Prepare and preheat
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line the bottoms with parchment for easy release.
Whisk dry ingredients
In a large mixing bowl, whisk together all-purpose flour, unsweetened cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt until evenly distributed and free of lumps.
Combine dry and wet
Pour the wet mixture into the dry ingredients and mix on low speed (or with a spatula) just until combined. Do not overmix to avoid a dense cake.
Add coffee
Stir in the hot coffee or hot water until the batter is smooth and slightly thin. The liquid helps activate the cocoa for a richer chocolate flavor.
Bake
Divide batter evenly between the prepared pans. Bake for 28–32 minutes, or until a toothpick inserted into the centers comes out with a few moist crumbs attached.
Cool
Let cakes cool in the pans for 10 minutes, then run a knife around the edges and invert onto a wire rack to cool completely before frosting.
FROSTING
Heat the cream
Place the chopped semisweet chocolate in a heatproof bowl. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer; do not boil.
Make ganache
Pour the hot cream over the chopped chocolate. Allow to stand for 2 minutes, then whisk until the mixture is smooth and glossy. If desired, whisk in the unsalted butter, vanilla extract, and a pinch of salt until fully incorporated.
Cool to spreadable
Let the ganache cool at room temperature, whisking occasionally, until it reaches a spreadable glaze consistency (about 20–30 minutes). If it becomes too thick, warm it briefly over a water bath and re-whisk.
ASSEMBLY
Level and stack
If the cake layers are domed, level them with a sharp knife. Place the first layer on a serving plate, and spread a thick, even layer of ganache over the top. Place the second cake layer on top.
Crumb coat (optional but recommended)
Apply a thin layer of ganache around the sides and top to seal in crumbs. Chill for 10–15 minutes to set.
Final coat
Pour the remaining ganache onto the top center of the cake, then use a spatula to spread it over the top and down the sides for a smooth, glossy finish. Allow the ganache to set before slicing.
