Prepare the onions

Peel the onions and cut into 1/4- to 1/2-inch thick sticks. Separate into individual straws.

Make the dredge

In a shallow bowl, whisk together flour, cornstarch, baking powder, salt, pepper, paprika, garlic powder, and onion powder until evenly combined.

Make the egg wash

In a separate bowl, whisk the egg with the buttermilk until smooth.

Prepare the coating

In a third bowl, combine the panko breadcrumbs with the grated Parmesan cheese.

Bread the onion sticks

Dip each onion straw into the dredge to coat, shake off excess. Dip into the egg wash, allow excess to drip, then roll in the breadcrumb-Parmesan mixture. Place on a rack as you go to prevent sticking.

Heat the oil

Pour oil into a heavy pot to a depth of 2–3 inches and heat to 350°F (175°C). Maintain temperature as you fry.

Fry until crisp

Fry the breaded onion straws in batches for 2–3 minutes per batch, until golden brown and crisp. Remove with a slotted spoon and drain on paper towels.

Finish and serve

Season with a pinch of salt, garnish with chopped parsley, and serve immediately with dipping sauce of choice.
