Begin by harvesting ripe Garnacha grapes from the vineyards in Almansa, Spain. Ensure that the grapes are healthy and free from rot.

Carefully crush the grapes to release the juice and separate the stems. This can be done using a grape crusher or by hand.

Crushing and Destemming

Add the sulfur dioxide to the crushed grapes to inhibit unwanted bacteria and wild yeast. This should be done immediately after crushing.

Transfer the crushed grape mixture into a fermentation vessel. Add the wine yeast and sugar to the mix, and stir gently.
