Preparation
Prepare the Filling
In a mixing bowl, combine the boudin sausage (removed from casing), cream cheese, and chopped green onions. Mix until well combined.
Assemble the Wontons
Place a wonton wrapper on a clean surface. Spoon about 1 tablespoon of the filling into the center of the wrapper. Wet the edges of the wrapper with water, fold it in half to form a triangle, and press the edges to seal. Optionally, you can fold the two corners of the triangle together for a more decorative shape.
Fry the Wontons
In a deep pan or fryer, heat the oil over medium heat. Once hot, carefully add the wontons in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove from oil and drain on paper towels.
Serve
Serve the boudin wontons hot with creole mustard pepper jelly on the side for dipping.
