Preparation
Prepare the Puff Pastry
Preheat the oven to 400°F (200°C). Roll out the puff pastry sheets on a floured surface to smooth them. Cut each sheet into rectangles (about 3x4 inches). Place on a baking sheet lined with parchment paper and prick with a fork to prevent puffing. Bake for 15-20 minutes until golden brown. Let cool.
Make the Pastry Cream
In a saucepan, combine milk, sugar, and vanilla. Heat until just simmering. In a separate bowl, whisk egg yolks and flour until smooth. Gradually add hot milk mixture to the egg yolk mixture, whisking continuously. Return to the saucepan and cook over medium heat, stirring until thickened. Remove from heat, stir in butter, and let cool completely.
Whip the Cream
In a large bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and continue to whip until stiff peaks form.
Assemble the Napoleon
Layer the cooled puff pastry sheets, pastry cream, and whipped cream. Start with a puff pastry layer, followed by pastry cream, then whipped cream, and repeat the layers, finishing with a final pastry layer on top. Dust with powdered sugar.
Chill and Serve
Refrigerate the assembled Napoleon for at least 1 hour before serving to allow the layers to set. Slice and enjoy!
