Prepare the Oysters

Shuck the oysters and place them on a clean plate. Make sure to reserve some of the oyster liquor for added flavor.

Wrap with Bacon

Cut each slice of smoked Canadian bacon in half. Wrap each oyster with a piece of bacon and secure with a skewer.

Prepare the Breading

In a shallow bowl, mix together flour, cornmeal, salt, black pepper, and cayenne pepper. In another bowl, whisk together the eggs and milk.

Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Breading the Oysters

Dip each bacon-wrapped oyster first into the egg mixture, then dredge in the flour-cornmeal mixture until fully coated.

Fry the Oysters

Carefully place the breaded oysters into the hot oil in batches, frying for about 3-4 minutes or until golden brown. Remove and drain on paper towels.

Serve

Arrange the fried oysters on a serving platter and drizzle with Marchand de Vin Sauce before serving.
