Prepare the Ingredients

Wash and slice the leeks, peel and dice the potatoes, and chop the onion.

Cook the Vegetables

In a large pot, combine the leeks, potatoes, onion, and vegetable broth. Bring to a boil, then reduce heat and simmer for about 20 minutes, until the potatoes are tender.

Blend the Soup

Remove the pot from heat and allow it to cool slightly. Use an immersion blender to puree the soup until smooth. If using a regular blender, let the soup cool and blend in batches.

Add Cream and Seasoning

Stir in the heavy cream, salt, and white pepper. Mix well to combine.

Chill the Soup

Cover the soup and refrigerate for at least 2 hours, or until thoroughly chilled.

Serve

Ladle the chilled soup into demi-tasse cups and garnish with chopped chives before serving.
