Burger Patties
Prepare the Patty Mixture
In a large mixing bowl, combine the ground lamb, minced garlic, chopped parsley, ground cumin, salt, and black pepper. Mix until all ingredients are well incorporated.
Form the Patties
Divide the mixture into four equal portions and shape each portion into a patty about ¾ inch thick. Make a small indentation in the center of each patty to help them cook evenly.
Berbere Spiced Tomato Jam
Cook the Onions and Tomatoes
In a saucepan over medium heat, add the chopped onion and sauté until translucent, about 5 minutes. Add the diced tomatoes and cook for an additional 5 minutes.
Add Spices and Simmer
Stir in the berbere spice mix, brown sugar, apple cider vinegar, and salt. Reduce the heat and let the mixture simmer for 15-20 minutes until it thickens to a jam-like consistency.
Tahini Yogurt Sauce
Mix the Sauce
In a small bowl, combine the Greek yogurt, tahini, lemon juice, minced garlic, and salt. Stir until smooth and well blended. Adjust salt to taste.
Assembly
Assemble the Burgers
Toast the burger buns on the grill or in a toaster. Place a cooked lamb patty on the bottom half of each bun. Top each patty with a generous spoonful of the berbere spiced tomato jam, followed by a few slices of cucumber, a dollop of tahini yogurt sauce, and a handful of fresh mint leaves. Finally, place the top half of the bun on each burger.
