Prepare the Marinade
In a large mixing bowl, combine the plain yogurt, minced garlic cloves, ground cumin, ground coriander, smoked paprika, salt, black pepper, lemon juice, and olive oil. Mix until well combined.
Marinate the Chicken
Add the boneless chicken thighs to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight for maximum flavor.
Prepare the Pita
While the chicken is cooking, warm the pita bread in a dry skillet or on the grill for about 1-2 minutes on each side until heated through.
Assemble the Dish
Once the chicken is cooked, let it rest for a few minutes before slicing. Place slices of chicken on the warm pita bread, then drizzle with fermented chili sauce, and top with garlic toum and bread and butter pickles. Serve with falafel fried chips or a lentil salad.
