Method
Base Preparation
Prepare the Oven
Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
Cream Butter
In another bowl, cream the unsalted butter until smooth. Gradually add the eggs one at a time, mixing well after each addition, then add vanilla extract and mix until combined.
Combine Mixtures
Gradually add the dry ingredients to the butter mixture, mixing until just combined. Do not overmix.
Filling Preparation
Prepare the Filling
In a medium saucepan over medium heat, combine fresh blackberries, honey, lemon juice, and cornstarch.
Cook the Filling
Cook the mixture until it starts to bubble and thicken, about 5-7 minutes. Remove from heat and set aside.
Assemble and Bake
Layer the Mixture
Pour half of the base mixture into the prepared baking dish, spreading it evenly. Then, add the blackberry filling on top, followed by the remaining base mixture.
Bake
Bake in the preheated oven for 30-35 minutes or until the top is golden brown and a toothpick inserted comes out clean.
Topping Preparation
Make the Topping
In a clean bowl, beat the heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract, then continue to beat until stiff peaks form.
Serving
Serve
Allow the baked dish to cool slightly before serving. Top each slice with a generous dollop of whipped cream topping.
