Prepare the Potatoes

Wash and peel the potatoes. Using a mandoline or sharp knife, slice them into thin rounds about 1/8 inch thick.

Soak the Potato Slices

Place the sliced potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This will help remove excess starch and make the chips crispier.

Drain and Dry

After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove excess moisture.

Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Fry the Chips

Carefully add a handful of potato slices to the hot oil. Fry until golden brown and crispy, about 3-4 minutes. Remove them with a slotted spoon and place them on a paper towel-lined plate to absorb excess oil.

Season the Chips

While the chips are still hot, sprinkle them with salt, paprika, garlic powder, onion powder, and black pepper. Toss gently to coat evenly.

In a medium bowl, combine the sour cream, mayonnaise, Dijon mustard, chopped chives, lemon juice, salt, and black pepper.

Stir the mixture until all ingredients are fully combined and the dip is smooth.

Cover the bowl with plastic wrap and refrigerate the dip for at least 30 minutes to allow the flavors to meld.
