Prepare Tater Tots

Bake Tater Tots

Preheat your oven to 425°F (220°C). Spread the frozen Tater Tots in a single layer on a baking sheet. Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.

Make Chili

Cook Ground Beef and Veggies

In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion, minced garlic, and diced bell pepper. Sauté until softened, about 5 minutes. Add the ground beef, breaking it apart with a spoon, and cook until browned.

Add Remaining Chili Ingredients

Stir in the canned diced tomatoes, kidney beans, chili powder, cumin, salt, and black pepper. Bring to a simmer and let cook for 20-25 minutes, stirring occasionally.

Make Beer Cheese Sauce

Combine Ingredients

In a medium saucepan over medium heat, combine the beer, cream cheese, garlic powder, onion powder, salt, and black pepper. Stir until the cream cheese is melted and the mixture is smooth.

Add Cheddar Cheese

Gradually add the cheddar cheese, stirring constantly until melted and creamy. Remove from heat and set aside.

Assemble Dish

Layer Tater Tots

Once the Tater Tots are done baking, remove them from the oven and place them on a large serving platter or bowl.

Top with Chili and Cheese Sauce

Spoon the hot chili over the Tater Tots, followed by a generous drizzle of the beer cheese sauce.

Add Final Toppings

Add a dollop of sour cream on top and sprinkle with sliced scallions.
