Prepare
If using egg white for a silky texture, separate one fresh egg and reserve the white. Chill your coupe or rocks glass in the freezer or fill it with ice to chill while you mix.
Combine ingredients
In a cocktail shaker, add 2 oz St. Rémy (cognac), 0.75 oz apricot liqueur, 0.75 oz fresh lemon juice, and 0.5 oz simple syrup. If using egg white, add the egg white now.
Dry shake (if using egg white)
If you added egg white, seal the shaker and shake vigorously without ice for 12–15 seconds to emulsify and build foam.
Wet shake
Add a generous handful of ice to the shaker. Shake vigorously for 12–18 seconds until the shaker is cold to the touch and well diluted (~15–20% dilution).
Strain
Double-strain the cocktail into the chilled coupe or a rocks glass filled with fresh ice (choose coupe for a drier, colder presentation or rocks for a longer drink). Use a fine mesh strainer if you used egg white to remove any small ice shards.
Finish with bitters (optional)
If desired, add 2 dashes of Angostura bitters on top of the foam (if using egg white) or in the drink and gently swirl once to integrate.
