Pastry Dough Preparation
Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Cut in the unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Add Ice Water
Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Do not overmix.
Chill the Dough
Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.

Prepare Fruits
Wash and slice the seasonal fruits. Place them in a mixing bowl.
Mix Filling Ingredients
Add granulated sugar, ground cinnamon, lemon juice, and cornstarch to the fruits. Toss gently to combine until the fruits are evenly coated.
Assembly and Baking
Preheat Oven
Preheat your oven to 400°F (200°C).
Roll Out Dough
On a floured surface, roll out the chilled dough into a large circle about 12 inches in diameter.
Add Filling
Transfer the rolled-out dough to a parchment-lined baking sheet. Spoon the fruit filling into the center of the dough, leaving a 2-inch border around the edge.
Fold Edges
Gently fold the edges of the dough over the filling, pleating as necessary to create a rustic look.
Prepare Egg Wash
In a small bowl, whisk together the egg and milk. Brush this mixture over the folded edges of the galette.
Bake
Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
Cool and Serve
Allow the galette to cool slightly before slicing. Serve warm or at room temperature.
