Pears
Serrano-Infused Honey
Method
Preparing the Serrano-Infused Honey
Infuse the Honey
In a small saucepan, combine the honey and whole serrano peppers. Heat over low heat until the honey is warm but not boiling. Allow to simmer gently for about 10-15 minutes, stirring occasionally, to infuse the heat from the peppers into the honey. Once infused, remove from heat and let cool. Strain the honey into a jar, discarding the peppers.
Preparing the Spiced Roman Pears
Prepare the Pears
Wash and peel the pears. Cut each pear in half and remove the core. Set aside.
Marinate the Pears
In a large bowl, combine the spiced rum, pear liqueur, fresh lemon juice, fresh lime juice, and ground cinnamon. Add the pear halves to the mixture and toss gently to coat. Allow the pears to marinate for at least 30 minutes, stirring occasionally.
Cook the Pears
Preheat your grill or grill pan over medium heat. Place the marinated pear halves on the grill, cut side down. Grill for about 5-7 minutes until they have nice grill marks. Flip the pears over and grill for an additional 5-7 minutes until they are tender.
