Season the Steak
Pat the ribeye steaks dry with paper towels. Season both sides generously with salt and black pepper.
Preheat the Pan
In a large skillet, heat the olive oil over medium-high heat until shimmering.
Cook the Steak
Add the seasoned steaks to the pan and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness.
Add Flavors
In the last minute of cooking, add the butter, garlic cloves, and thyme to the pan. Spoon the melted butter over the steaks for extra flavor.
Rest the Steaks
Remove the steaks from the pan and let them rest for at least 5 minutes before slicing.

Prepare the Potatoes
Peel the russet potatoes and cut them into thin fries, about 1/4 inch thick.
Soak the Potatoes
Place the cut fries in cold water and let them soak for at least 30 minutes to remove excess starch.
Dry the Potatoes
Drain the fries and pat them dry with paper towels to ensure they fry up crispy.
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 325°F (160°C).

Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for 2-3 minutes until golden brown and crispy.

Remove the fries from the oil, drain on paper towels, and season with salt while they are still hot.
