Steak Preparation

Season the Steak

Sprinkle both sides of the California Striploin with salt and black pepper. Let it rest at room temperature for about 15 minutes.

Sear the Steak

Heat olive oil in a skillet over medium-high heat. Add the steak and sear for 3-4 minutes on each side for medium-rare, adjusting the time according to preferred doneness.

Add Rosemary

In the last minute of cooking, add a sprig of fresh rosemary to the skillet for extra flavor.

Rest the Steak

Remove the steak from the skillet and allow it to rest for 5 minutes before slicing.

Frites Preparation

Prepare the Potatoes

Peel and cut the russet potatoes into thin strips (about 1/4 inch thick). Rinse in cold water and pat dry with paper towels.

Heat the Oil

In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).

Fry the Potatoes

Carefully add the potato strips to the hot oil in batches, frying for 4-5 minutes until golden and crispy. Remove with a slotted spoon and drain on paper towels.

Sprinkle the fried potatoes with salt to taste while they are still hot.
