Method
Prepare the Pork Chops
Season the Pork Chops
Pat the pork chops dry with paper towels. Season both sides with salt and black pepper.
Sear the Pork Chops
In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside.
Make the House Tomato Sauce
Sauté Onion and Garlic
In the same skillet, add 1 tablespoon of olive oil. Sauté the diced onion over medium heat until translucent, about 3-4 minutes. Add the minced garlic and sauté for another minute until fragrant.
Combine Tomato Sauce Ingredients
Add the crushed canned tomatoes, dried oregano, dried basil, sugar, salt, and black pepper to the skillet. Stir to combine and bring to a simmer.
Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 10-15 minutes, allowing the flavors to meld together.
Prepare the Cherry Tomatoes
Roast the Cherry Tomatoes
In a bowl, toss the cherry tomatoes with 1 tablespoon of olive oil and salt. Spread them on a baking sheet and roast in a preheated oven at 400°F (200°C) for about 15-20 minutes, until they are blistered and tender.
Combine and Serve
Serve the Dish
Place the seared pork chops on a plate, spoon the house tomato sauce over the top, and garnish with roasted cherry tomatoes. Enjoy your meal!
