Prepare the Tenderloin

Preheat the grill to high heat. Season the prime tenderloin with salt and black pepper. Drizzle with olive oil and rub it evenly on all sides.

Grill the Tenderloin

Place the tenderloin on the grill and sear for about 4-5 minutes on each side for medium-rare. Use a meat thermometer to ensure it reaches 135°F. Remove from the grill and let it rest for 10 minutes.

Sauté the Morels and Asparagus

In a skillet, melt butter over medium heat. Add the morel mushrooms and sauté for 3-4 minutes. Add white asparagus and cook for an additional 5-7 minutes until tender. Season with salt and pepper.

Grill the Shishito Peppers

Toss the shishito peppers with olive oil, salt, and pepper. Grill them for 3-4 minutes until charred and blistered.

Make the Cognac Jus

In the same skillet used for the morels, add cognac and scrape the bottom to deglaze. Let it simmer for 2-3 minutes until reduced by half. Adjust seasoning if necessary.

Plate the Dish

Slice the rested tenderloin and arrange it on a plate. Top with sautéed morels and asparagus, grilled shishito peppers, and drizzle with cognac jus.
