Cook the Pasta

In a large pot of boiling salted water, cook the spaghettoni pasta according to package instructions until al dente. Drain and set aside, reserving some pasta water.

Cook the Lardons

In a large skillet, heat the olive oil over medium heat. Add the lardons and cook until crispy and golden brown, about 5-7 minutes.

Char the Green Onions

While the lardons are cooking, char the green onions on a grill or in a pan until they are slightly blistered and tender, about 3-4 minutes. Remove from heat and chop into smaller pieces.

Combine Ingredients

Once the lardons are cooked, add the harissa paste to the skillet and stir well. Add the cooked spaghettoni, charred green onions, and a splash of reserved pasta water. Toss everything together over low heat until well coated.

Serve

Remove from heat and stir in the shredded comté cheese. Season with salt and black pepper to taste. Serve immediately, garnished with additional cheese if desired.
