Main Ingredients
Piemontese Sauce
Method
Cooking the Meat
Prepare the Steak
Take the contra-filet out of the refrigerator and let it sit at room temperature for about 30 minutes. This helps in even cooking.
Season the Steak
Pat the steak dry with paper towels and season generously with salt and black pepper on both sides.
Sear the Steak
In a large skillet, heat olive oil over medium-high heat. Once hot, add the steak and sear for about 4-5 minutes per side for medium-rare, adjusting time for your preferred doneness.
Rest the Steak
Remove the steak from the skillet and let it rest on a cutting board for 10 minutes before slicing.
Making the Piemontese Sauce
Deglaze with Wine
Pour in the white wine, scraping the bottom of the skillet to release any browned bits. Let it simmer for about 5 minutes until reduced by half.
Add Cream and Cheese
Stir in the heavy cream and bring it to a gentle simmer. Add the grated Parmesan cheese and mix until it melts and the sauce thickens slightly, about 3-4 minutes.
Finish the Sauce
Stir in the chopped parsley and season with salt and pepper to taste. Remove from heat.
Serving
Plate the Dish
Slice the rested contra-filet against the grain into thick slices. Arrange on a plate and generously spoon the Piemontese sauce over the top.
Garnish and Serve
Garnish with additional parsley if desired and serve immediately with your choice of side dishes.
