Method

Prepare the Shrimp Filling

Sauté Aromatics

In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.

Cook Shrimp

Add the diced bell pepper and sauté for another 2 minutes. Then, add the shrimp and cook until they turn pink, about 3-5 minutes.

Add Vegetables and Seasoning

Stir in the diced tomato, coconut milk, chopped cilantro, salt, and black pepper. Let the mixture simmer for 5 minutes, stirring occasionally. Once done, remove from heat and set aside.

Prepare the Mashed Yucca

Boil Yucca

In a large pot, bring water to a boil and add the chopped yucca. Cook until the yucca is tender, about 20-25 minutes.

Mash and Season

Drain the yucca and return it to the pot. Add butter, milk, and salt. Mash until smooth and creamy. Set aside.

Assemble and Bake

Layer the Dish

Preheat your oven to 180°C (350°F). In a baking dish, spread the shrimp filling evenly at the bottom. Top with the mashed yucca, smoothing it out with a spatula.

Add Cheese and Paprika

Sprinkle the grated cheese over the top of the yucca layer and dust with paprika.

Bake

Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and golden brown.
