Marinate the Pork

In a large bowl, combine the pork shoulder, minced garlic cloves, chopped onion, bay leaves, salt, black pepper, and olive oil. Massage the marinade into the pork and let it sit for at least 2 hours, preferably overnight in the refrigerator.

Cook the Pork

Preheat the oven to 150°C (300°F). Place the marinated pork in a roasting pan and cover it tightly with aluminum foil. Roast for about 3 hours, or until the pork is tender and easily shreds with a fork. Remove from the oven and allow it to rest for 15 minutes.

Prepare the Bread

While the pork is resting, slice the crusty bread rolls in half. Lightly toast them if desired.

Assemble the Sandwiches

Shred the cooked pork with two forks. Spread mayo on the bottom half of each bread roll. Top with a generous portion of shredded pork, sliced tomatoes, pickled jalapeños, and fresh cilantro. Place the top half of the roll on the sandwich.
