Make the Crêpe Batter

In a large mixing bowl, whisk together the flour and salt. In another bowl, combine the milk, eggs, melted butter, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, whisking until smooth. Let the batter rest for 30 minutes.

Cook the Crêpes

Heat a non-stick skillet over medium heat and lightly grease it with butter. Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom evenly. Cook for 1-2 minutes until the edges start to lift, then flip and cook for another minute. Repeat with remaining batter.

Prepare the Chocolate Filling

Melt dark chocolate in a heatproof bowl over simmering water or in the microwave. Stir until smooth.

Assemble the Crêpes

Place a crêpe on a plate, spread a spoonful of melted chocolate in the center, and fold the crêpe over. Repeat with remaining crêpes and chocolate.
