Seafood Avocado Cocktail

This could very well be the ultimate seafood cocktail, served with a light-bodied sauce instead of the typical red glop. With lots of vegetables to balance the chunks of shrimp and crab, it can be served as a salad as well as a palate- and eye-pleasing appetizer.

Method

Preparation

1

Prepare the Crab Stuffing

In a bowl, mix lump crab meat, cream cheese, breadcrumbs, green onion, lemon juice, garlic powder, Old Bay seasoning, salt, and black pepper until well combined.

2

Prepare the Prawns

Carefully split the jumbo prawns down the back and remove the vein. Stuff each prawn with the crab mixture.

3

Wrap Prawns in Bacon

Wrap each stuffed prawn with a slice of bacon and secure with a toothpick if necessary.

Cooking

4

Broil the Prawns

Preheat the broiler. Place the bacon-wrapped prawns on a baking sheet and broil for about 8-10 minutes, or until the bacon is crispy and prawns are cooked through.

5

Prepare Mashed Potatoes

Boil peeled potatoes until fork-tender. Drain and mash with butter, milk, salt, and pepper.

6

Sauté Chef's Vegetables

In a pan, heat olive oil and sauté mixed vegetables until tender. Season with salt and pepper to taste.

7

Make Jalapeño White Sauce

In a bowl, combine mayonnaise, sour cream, jalapeño peppers, lime juice, garlic powder, salt, and black pepper. Mix until smooth.

Serving

8

Plate the Dish

Serve the broiled crab stuffed jumbo prawns with a side of mashed potatoes, sautéed vegetables, and drizzled with jalapeño white sauce.
