Prepare the Ingredients

Clean the clams under cold running water. Chop the chorizo, shallots, garlic, and lemongrass finely.

Cook the Chorizo

In a large pot, heat olive oil over medium heat. Add the chopped chorizo and cook until it's browned and crispy, about 5 minutes.

Add Aromatics

Add the shallots, garlic, and lemongrass to the pot. Sauté until the shallots are translucent, about 3-4 minutes.

Make the Broth

Stir in the red curry paste and cook for 1 minute. Then add the coconut milk and bring to a gentle simmer.

Steam the Clams

Add the cleaned clams to the pot, cover it, and steam for about 5-7 minutes or until the clams open up. Discard any that remain closed.

Finish the Dish

Season with salt and black pepper to taste. Stir in fresh cilantro before serving.

Serve

Serve the clams in a bowl with the broth and toasted baguette on the side. Garnish with lime wedges.
