Marinated Skirt Steak

Prepare the Marinade

In a bowl, mix olive oil, lime juice, garlic powder, cumin, salt, black pepper, and chili powder.

Marinate the Steak

Place the skirt steak in a resealable bag, pour the marinade over it, seal, and refrigerate for at least 1 hour or up to overnight.

Cook the Steak

Preheat a grill or skillet over medium-high heat. Remove the steak from the marinade and cook for about 4-5 minutes per side until desired doneness is reached. Let it rest for a few minutes before slicing.

Mexican Slaw

Combine Ingredients

In a bowl, combine shredded cabbage, carrot, red onion, cilantro, lime juice, salt, and pepper. Toss to combine and refrigerate until serving.

Pico de Gallo

Prepare Pico de Gallo

In a bowl, mix diced tomatoes, red onion, jalapeño, cilantro, lime juice, and salt. Let it sit for at least 15 minutes for flavors to meld.

Avocado Salsa

Make Avocado Salsa

Mix diced avocado, tomato, red onion, lime juice, salt, and cilantro in a bowl. Set aside.

Assemble Tacos

Warm corn tortillas on the grill or in a skillet. Fill each tortilla with sliced skirt steak, top with Mexican slaw, pico de gallo, avocado salsa, and crumbled cotija cheese.
