Prepare the Juice

Juicing the Pineapple

Cut the fresh pineapple into chunks. Place the pineapple chunks in a blender and blend until smooth to extract the juice.

Strain the Juice

Pour the blended pineapple mixture through a fine mesh strainer into a bowl or pitcher to separate the juice from the pulp. Use a spatula to press down on the pulp to extract as much juice as possible.

Mix the Juice Ingredients

In the bowl or pitcher with the pineapple juice, add the lime juice and grenadine. Stir well to combine all the ingredients.

Prepare the Spice Mix

In a small bowl, mix the ground cinnamon and finely grated fresh ginger. Stir until evenly combined.

Incorporate the Spice Mix

Add the spice mix to the pineapple juice mixture. Stir until the spices are well integrated into the juice.

Finalize the Drink

Combine with Ginger Beer

In a large glass or pitcher, pour the prepared pineapple juice mixture. Slowly add the ginger beer on top to maintain fizziness. Stir gently to combine without losing carbonation.

Serve

Pour the Pompiña into glasses over ice if desired. Garnish with a slice of fresh pineapple or a lime wedge, and sprinkle a pinch of cinnamon on top for added flavor.
