Method

Crust Preparation

1

Prepare the Crust

Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.

2

Form the Crust

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 10 minutes, then remove and let cool.

Filling Preparation

3

Prepare the Filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar and continue to beat until fully combined.

4

Add Remaining Ingredients

Add the sour cream, vanilla extract, and eggs, mixing well after each addition until the mixture is smooth.

5

Pour into Crust

Pour the filling over the cooled crust in the springform pan, smoothing the top with a spatula.

6

Bake the Cheesecake

Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.

7

Cool and Chill

Remove from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours, preferably overnight.

Topping Preparation

8

Prepare the Topping

In a medium saucepan, combine the chopped rhubarb, sliced strawberries, granulated sugar, cornstarch, and lemon juice. Stir to combine.

9

Cook the Topping

Cook over medium heat, stirring frequently, until the mixture starts to bubble and thicken, about 5-7 minutes.

10

Cool the Topping

Remove from heat and let the topping cool slightly before spooning it over the chilled cheesecake.

Assembly

11

Assemble the Cheesecake

Once the cheesecake has set, carefully remove it from the springform pan. Top with the strawberry-rhubarb mixture, spreading it evenly over the top.

12

Serve

Cut into slices and serve chilled. Enjoy your Strawberry Rhubarb Cheesecake Rendezvous!
