Method
Prepare the Cheese Filling
Mix the Cheese
In a large mixing bowl, combine the grated Parmesan cheese, grated Romano cheese, ricotta cheese, and shredded mozzarella cheese. Mix until well combined.
Prepare the Tortellini
Cook the Tortellini
Bring a large pot of salted water to a boil. Add the tri-colored tortellini and cook according to package instructions, usually about 3-5 minutes or until they float to the surface. Drain and set aside.
Stuff the Tortellini
Take a small amount of the cheese filling and place it in the center of each tortellini wrapper. Fold the wrapper over the filling to form a triangle, then bring the two corners together and pinch to seal, ensuring no filling escapes.
Prepare the Sauce (Optional)
Sauté Garlic
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add Seasonings
Stir in the crushed red pepper flakes, salt, and black pepper. Cook for an additional minute.
Toss the Tortellini
Add the cooked tortellini to the skillet and gently toss to coat with the sauce. Add chopped fresh basil and mix well.
Serve
Garnish and Serve
Plate the tortellini and sprinkle with additional grated Parmesan cheese for garnish. Serve immediately.
