Prepare the Steak

Thinly slice the ribeye steak against the grain into strips. Season with salt and black pepper to taste.

Prepare the Vegetables

Slice the onion and green bell pepper into thin strips. Clean and slice the mushrooms.

Sauté the Vegetables

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and bell peppers, and sauté until they are soft and slightly caramelized, about 5-7 minutes. Add the mushrooms and cook for another 3-4 minutes until they are tender. Remove the mixture from the skillet and set aside.

Cook the Steak

In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high. Add the sliced ribeye steak to the skillet and cook for about 3-4 minutes, stirring occasionally, until browned and cooked to your desired doneness.

Combine Ingredients

Return the sautéed vegetables to the skillet with the cooked steak. Mix well and allow them to heat together for 1-2 minutes.

Melt the Cheese

Place the slices of American cheese over the steak and vegetable mixture. Cover the skillet with a lid and let it cook for another 1-2 minutes until the cheese is melted.

Assemble the Sandwich

Slice the hoagie rolls lengthwise without cutting all the way through. Fill each roll with the steak and vegetable mixture, ensuring an even distribution. Serve hot.
