Gently wipe the fresh button mushrooms with a damp paper towel to remove any dirt. Do not wash them under water as they can absorb moisture.

Marinate the Mushrooms

In a large bowl, combine the buttermilk and hot sauce. Add the cleaned mushrooms and ensure they are fully submerged. Cover and refrigerate for at least 30 minutes to 1 hour.

In a separate bowl, mix together the all-purpose flour, cornmeal, paprika, garlic powder, onion powder, salt, and black pepper until well combined. This will be the dry breading mixture.

In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can check the temperature by dropping a small amount of the breading mixture into the oil; it should sizzle and rise to the surface.

Remove the mushrooms from the buttermilk marinade, allowing excess liquid to drip off. Dredge each mushroom in the breading mixture, ensuring they are well coated.
