Method
Marinating the Chicken
Prepare the Marinade
In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Whisk until well blended.
Marinate the Chicken
Place the boneless chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is evenly coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for best flavor.
Grilling the Chicken
Preheat the Grill
Preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C).
Grill the Chicken
Remove the chicken from the marinade and discard the leftover marinade. Place the chicken on the grill and cook for 6-8 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is no longer pink in the center. Remove from grill and let rest for 5 minutes before serving.
Preparing the Vegetables
Cut the Vegetables
While the chicken is marinating, slice the zucchini and bell peppers into bite-sized pieces.
Season the Vegetables
In a large bowl, toss the sliced zucchini and bell peppers with olive oil, salt, and black pepper until evenly coated.
Serving
Plate the Dish
To serve, place grilled chicken on a plate and arrange the grilled seasonal vegetables beside it. Enjoy your grilled chicken with vegetables!
